Michelle Hurn

Michelle Hurn graduated from Kansas State University with a Bachelor of Science degree in Nutrition and Dietetics in 2007. She completed her internship at Oregon Health and Science University in 2009 and became a registered dietitian. She currently has over 15 years of experience as a lead dietitian in clinical, acute care, psychiatric care, and in a long-term care facility that specializes in type 2 diabetes and obesity.

While practicing inpatient and outpatient care in the hospital setting, Michelle discovered a disheartening connection between the high carbohydrate, low fat, “sugar in moderation,” nutrition guidelines she was required to teach, and the rapidly declining health of her patients. In 2019, Michelle decided to change her lifestyle and adopted a low carb, high fat, animal protein diet to see if it would alleviate severe muscle pain she was experiencing. Not only was her muscle pain gone in a matter of weeks, her decades of anxiety began to fade.

To share her story, expertise, and research, Michelle wrote the book, “The Dietitian’s Dilemma,” detailing how the current nutrition guidelines came into existence and advocating a low carbohydrate, animal-based way of eating as an option for individuals struggling with type 2 diabetes, mental disorders, eating disorders, sarcopenia, and heart disease.

Using this approach led Michelle to win her first Ultra Marathon in 2020 covering 44.63 miles in a 6-hour time frame (8.04-minute mile pace). Michelle also won the Tunnel Hill 50-mile race, clocking 7.03.01 (8.28 pace) in 2021 and won the Strawberry Fields 100k trail run covering 62 miles in 10.05.56. (9.45 pace).

In 2023, when Michelle’s wife was diagnosed with breast cancer, she dove into all the research on cancer cell metabolism. Knowing that ketogenic diets are a powerful adjunct to cancer therapies, Michelle now counsels her clients dealing with cancer on how to use therapeutic, calorie-restricted (if appropriate) ketogenic diets to improve outcomes.
